Salad: Spring mix baby greens with fresh orange slices, tossed in a citrus vinaigrette, and garnished with crispy rice noodles.

Appetizer: Warm tomato herb tart, nestled in melted Brie cheese, garnished with sweet balsamic and yellow pepper coulis.

Entre: Medallions of beef tenderloin, crowned with snow crab claws, with a Shiraz thyme demi-glaze. Served with new potatoes and fresh asparagus.

Fresh Atlantic Salmon and maple glazed julienne of vegetable with Gruyere cheese, wrapped in phyllo pastery, on maple cream sauce. Served with rice pilaf and fresh asparagus.

Grilled Lamb tenderloins served on caramelized balsamic onions with sweet potato frites, drizzled with a Jack Daniel's rosemary sauce. Served with new potatoes and fresh asparagus.

Desert: Cool lemon mousse, pooled into a mixed berry coulis and lemoncello sauce, accompanied by a chocolate-dipped strawberry.

Appetizer: A warm puff pastry tart filled with fresh tomatoes, thyme and basil, nestled in melted double-cream Brie cheese.

Main: Ontario Cornish game hen with rosemary -apricot demi-glaze. Served with basmati and wild rice stuffing and fresh asparagus.

Dessert: A dark chocolate margarite, filled with a Chablis sabayon and local strawberries, drizzled with white chocolate and Grand Marnier
